Lunch- Baked plantain chips, raw zucchini chips, with guacamole and egg salad, and some salsa. So colorful and healthy.

 Egg Salad

6 eggs, hard-boiled

1/4 c. homemade mayo

1 Tbsp. dry celery

1 tsp. garlic powder

1 tsp. onion powder

salt and pepper to taste

Mix all ingredients and serve over lettuce or with veggie chips.
