Easy Lunch Whole 30
Left over rotisserie chicken, sauce-1/2 can of coconut milk, a few banana peppers, can of hatch green chiles with 1/2 juice of lime- some fresh parsley and some of my homemade bone broth. Blend until smooth. Very good! Poured sauce over chopped chicken and heated in oven for 20 minutes. Voila-

Lunch- Baked plantain chips, raw zucchini chips, with guacamole and egg salad, and some salsa. So colorful and healthy.
Egg Salad 6 eggs, hard-boiled 1/4 c. homemade mayo 1 Tbsp. dry celery 1 tsp. garlic powder 1 tsp. onion powder salt and pepper to taste Mix all ingredients and serve over lettuce or with veggie chips.
